List #61 - 5 meals I return to when life feels busy

Lists are composed of five things that caught my eye in the past week- from brands to food to clothes.

I often fluctuate between days and weeks when I’m completely inspired by cooking, and days when cooking feels like scaling Mount Everest. During those “Mount Everest-times”, these are the meals I turn to that are easy and healthy (but also delicious because we CANNOT be doing plain grilled chicken and broccoli every day).

  1. Burrito bowls

    Ingredients:

    Grilled chicken (add whichever spices you like - I like an Indian spice blend!)

    Shredded lettuce

    Shredded cheese

    Chopped tomatoes (although we often just buy Pico de Gallo)

    Avocado

    Black beans (I also stew these overnight with an Indian spice mix and we have them in the fridge for the week)

    Rice or tortillas

  2. Mushroom toast

    I have the whole recipe here! Ingredients are:

    Olive oil

    Good sourdough bread (sliced thick)

    Mayo

    Paprika OR Old Bay Seasoning

    Mushrooms (literally any king but I’ve been using the packaged button mushrooms). The whole package cooks down enough for two open-faced sandwiches!

    Spices like cumin or chili powder for seasoning the mushrooms

  3. Cherry tomato pasta

    Ingredients:

    Cherry tomatoes

    Olive oil

    Garlic

    Fettuccine

    Parmegiano reggiano (optional!)

  4. Everything salads

    Ingredients:

    Seriously, everything in your fridge can be a salad if you manifest. I usually throw whatever protein we have into a bowl with lettuce (or literally whatever greens are left) and the rest of our veggies. Toss with olive oil, mustard (or vinegar/lemon juice) and salt. This is a great idea for when you need to clean out your fridge!

  5. Chrissy Teigen’s italian sub (Picnic Sandwich)

    This is a recipe that does involve some forethought, but since the assembly is so easy and doesn’t require turning on an oven, I include it here. This is also a great Sunday night sandwich! I adjust it to accommodate whatever ingredients we don’t have, and since its so big, we always have leftovers. Recipe here.
